Ingredients
- 4 medium tomatoes, chopped into 1/2" pieces or 2 pints grape tomatoes
- 1 medium seedless cucumber, chopped into 1/2" pieces
- 1/2 medium red onion, chopped into 1/2" pieces
- 1 tbsp lemon zest
- 1/2 tsp salt
- 1/4 tsp black pepper
Preparation
Step 1
Toss all ingredients together in a large bowl. Allow to stand for at least 20 minutes. Yields 1 cup per serving.
