COCONUT-PECAN SWEET POTATOES

  • 1/2 CUP CHOPPED PECANS
  • 1/2 CUP FLAKED COCONUT
  • 13 CUP SUGAR
  • 4 POUNDS SWEET POTATOES, PEELED AND CUT INTO CHUNCKS
  • 1/3 CUP PACKED BROWN SUBAR
  • 1/4 CUP MELTED BUTTER
  • 1/2 TEASPON CINNAMON
  • 1/4 TEASPOON SALT
  • 1/2 TEASPOON COCONUT EXTRACT
  • 1/2 TEASPOON VANILLA EXTRACT

Preparation

Step 1

1. PLACE SWEET PATATOES IN A 5 QUART SLOW COOKER COATED WITH COOKING SPRAY.

2. CONBINE THE PECANS, COCONUT, SUGAR,BROWN SUGAR, BUTTER, CINNAMON AND SALT.

3. SPRINKLE OVER POTATOES.

4. COVER AND COOK ON LOW FOR 4 HOURS OR UNTIL POTAOES ARE TENDER.

5. STIR IN EXTRACT.
