  • 1 1/2 cups pitted and diced fresh peaches
  • 2 cups whole wheat flour
  • 3/4 cups sugar
  • 3 teaspoons baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg
  • 1 cup quick cooking oats
  • 2 eggs, well-beaten
  • 1 cup milk
  • 1/4 cup vegetable oil

Step 1

1. Preheat oven to 350. Grease muffin cups or line with paper muffin liners.

2. In a large bowl, mix together flour, sugar, baking powder, salt, baking soda, cinnamon and nutmeg. Stir in oats and peaches.

3. Stir together eggs, milk and oil. Add to the flour mixture, stirring just until moistened. Fold in peaches. Spoon batter into prepared muffin cups.

3. Bake 35 minutes or until done. Cool in pan 5 minutes. Remove to wire rack or serve immediately.
