Muffin Tin Meatloaves

Ingredients

  • 1 1/2 lbs lean ground beef
  • 1 1/2 cups shredded zucchini or carrots
  • 1 cup soft bread crumbs
  • 1 egg, lightly beaten
  • 1 tsp dried italian seasoning
  • 1/2 tsp salt
  • 1/4 cup ketchup

Preparation

Step 1

1. Preheat the oven to 400F.

2. In a large bowl, combine all the ingredients except for the ketchup. Mix lightly but thoroughly.

3. Place approximately 1/3 cup beef mixture into each of 12 medium muffin cups, pressing lightly. Spread ketchup over the tops of each mini-loaf.

4. Bake for 20 mins or until centers are no longer pink and internal temperature is 160F. Remove meatloaves from the pan to serve.
