Seafood Quiche

use any seafood in the quiche - fish, scallops, lobster,
crab and shrimp, You can use any or all you want.

Ingredients

  • For the filling:
  • For the pastry: ( or use Trader Joe's frozen pastry)
  • 1 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 cup (1 stick) margarine, cut into pieces
  • ice water
  • 1 tablespocn butter
  • 1/2 cup finely chopped onion
  • 1/4 cup finely chopped bell pepper
  • 1/4 cup finely chopped celery
  • 1/2 pound crab meat, picked over
  • 1/2 pound shrimp, peeled, deveined and cooked
  • 1 cup grated Swiss cheese
  • 1 1/4cups scalded milk or half and half
  • 2 eggs plus 2 yolks, beaten
  • 1 teaspoon salt
  • 2 teaspoons Old Bay Seafood Seasoning
  • Pinch of dried basil

Preparation

Step 1

To make the pastry:

Preheat oven to 350 degrees. In a food processor, combine flour, salt and margarine and pulse until mixture resembles corn meal. Add ice water, 1 tablespoon at a time, until dough just holds together. Gather into a ball, flatten into a disc and wrap in plastic. Chill 30 minutes. Between 2 sheets of parchment paper, roll out dough about 14-inch thick to fit a 9-inch pie pan. Transfer to pan and crimp the edges. Place a sheet of parchment paper over the dough and fill with raw rice or dry beans. Bake for 20 minutes. Remove from oven.

While the crust bakes, prepare the filling:
In a saucepan over medium heat, melt the butter. Saute the onion, bell pepper and celery until onion is translucent, about 5 minutes. Combine with the crab
meat and shrimp. Pour into the prepared crust, Sprinkle with grated Swiss cheese. Combine the milk, eggs, salt and Old Bay seasoning. Pour over all. Sprinkle the top with basil. Reduce oven temperature to 325 degrees. Bake for 49 to 50 minutes until set.
