Chicken Enchiladas with Green Chili Sour Cream Sauce

Ingredients

  • 10 tortillas
  • 2 c. cooked, shredded chicken
  • 2 c. shredded Monterey Jack cheese
  • 3 tbs butter
  • 3 tbs flour
  • 2 c. chicken broth
  • 1 c. sour cream
  • 1 4oz can diced gr. chilies
  • Garnish: cilantro, sour cream, chopped
  • tomatoes and gr. onion

Preparation

Step 1

Preheat oven to 350 degrees. Grease 9x13 baking dish. Mix chicken and 1 cup of cheese. Roll up in tortillas and place in baking dish. In a sauce pan, melt butter, stir in flour and cook 1 minute. Add the broth whisk until smooth. Continue heating until thick and bubby. Stir in sour cream and chilies. Pour sauce over tortillas and top with remaining cheese. Bake for 15 minutes until cheese melts. Garnish with cilantro, scallion, sour cream and chopped tomatoes. before serving.
