Turkey Tortilla Lasagna

Ingredients

  • 1 tsp. vegetable oil
  • 500 g ground chicken or turkey
  • 1 small onion, finely chopped
  • 1 small red bell peppers, seeded and chopped
  • 1/2 packet (1.25 oz.) Taco Seasoning Mix
  • 1/2 tsp. each dried oregano and basil
  • 1/2 jar (16 oz.) Taco Sauce, divided
  • or 398ml can tomato sauce + 2 tsp. brown sugar
  • 1 cup spinach
  • 3 (10-in.) fajita-size flour tortillas, divided
  • 2 cups shredded Mexican blend or Monterey Jack cheese, divided

Preparation

Step 1

PREHEAT oven to 350° F. Grease 9-inch baking dish with oil or lightly spray.

HEAT oil in a large skillet over medium. Add turkey or chicken; cook, stirring occasionally, until no longer pink. Stir in pepper, onion, seasoning mix and spices. Reduce heat to low; cook, stirring occasionally, until vegetables are slightly tender. If using tomato sauce, add to mixture with sugar and boil 5 mins.

If using taco sauce, spread onto bottom of prepared baking dish. Cover with 1 tortilla. Spread with half of chicken mixture, spinach and another 1/2 cup taco sauce. Sprinkle with 1 cup cheese. Repeat with remaining ingredients.

BAKE for 20 minutes or until heated through and cheese is melted. Cut into wedges.
