Ingredients

  • CAKE:
  • 3 eggs
  • 1/2 cup applesauce
  • 3/4 cup sugar
  • dash of salt
  • 1 cup flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/2 cup chopped walnuts, or
  • nuts
  • Powdered sugar
  • FILLING:
  • 1 (3 ounce) package cream cheese,
  • softened
  • 3 tablespoons butter, softened
  • 2 cups powdered sugar
  • 1/2 teaspoon vanilla
  • 1-2 tablespoons milk, if needed

Preparation

Step 1

CAKE:
Preheat oven to 350 degrees. Grease 15 x 10" jelly roll pan and line it with wax paper. Combine salt, flour, baking powder, baking soda, and cinnamon; set aside. Beat eggs until lemon colored about 5 minutes. Gradually, add sugar. Stir in applesauce. Add dry ingredients a little at a time. Pour batter into prepared pan. Sprinkle with nuts. Bake for 15 to 20 minutes or until toothpick inserted in center comes out clean. While cake is baking, cover a towel with powdered sugar. After removing cake from oven, turn the cake onto the towel. Pull wax paper off and roll with the towel and let cool. Mix filling.

FILLING:
Beat cream cheese and butter. Gradually, add powdered sugar and beat until smooth. Stir in vanilla. If mixture is too stiff, add milk a teaspoon at a time until desired consistency. Unroll cake, spread filling and re-roll. Refrigerate.
