Vegetable Couscous

Ingredients

  • 1 c couscous
  • 1/2 c carrots, diced
  • 1/2 c onions, diced
  • 1/2 c green pepper, diced
  • 1/2 c zucchini, diced
  • 1 T garlic, minced
  • 1 c chick peas
  • 1/2 t cumin
  • 1/2 t curry powder
  • 1/2 t red pepper flakes
  • 1/3 c parsley, chopped
  • black pepper

Preparation

Step 1

1) Cook couscous.

2) Saute carrots, onions, peppers, zucchini, and garlic for 5 min. Remove from heat.

3) Add remaining ingredients and combine with couscous.
