Pam Benjamins Chinese Chicken Salad

Ingredients

  • Dressing:
  • 2/3 cup of oil
  • 1/2 cup sugar
  • 1/2 cup white wine vinegar (I can't seem to find
  • this at Albertson's but other stores have it.)
  • 2 beef seasoning packets from Raman noodles.
  • (The cheap 10-15 cents packets, not the Raman
  • in a cup noodles.)
  • Salad:
  • large head of either red or green leaf lettuce
  • 5-6 chicken breasts (I am lazy and usually
  • buy a rotisserie chicken at the store and chill it.)
  • toasted slivered almonds (the match stick cut)
  • sunflower seeds (buy a small jar already shelled!)
  • 2 packets dry Raman noodles, crunched up

Preparation

Step 1

Make dressing the night before (It's better this way,
but it's still OK if the dressing is only made a couple
of hours ahead. I rarely plan far enough ahead to
do it the night before.)
Grill chicken or cut rotisserie chicken into bite size pieces
Pour dressing over lettuce and chicken.
Add the crunchies.
Toss and serve immediately.
I usually keep everything separate in case there are
leftovers. If you add the dressing individually, you c
an save leftover dry lettuce, chicken, crunchies,
etc. for a day or two.
