Ingredients
- 2 Tbsp. Olive Oil
- 2 Garlic Cloves, lightly crushed
- 1 tsp. Fresh Oregano
- 1 15oz. Can Crushed Tomatoes
- 1 tsp. Salt
- 1/2 tsp. Freshly Ground Black Pepper
- 1/2 lb. Dry Spaghetti, Fettuccine or Linguine
- 1/4 C. Grated Grana Padano (or any hard Italian cheese)
- Fresh Basil Leaves
Preparation
Step 1
Heat oil in a lg. saucepan over med heat. Add garlic & saute till golden brown, 2 min. Add tomatoes. Simmer over very low heat for 30 min, adding water by the 1/4 C.
to keep sauce from becoming too thick. (You can use leftover pasta water). Season with salt & pepper & reserve. Cook pasta in a lg. pot of heavily salted boiling water according to pkg. instructions; reserve 1 C. pasta cooking water. Add pasta to reserved tomato sauce in saucepan & finish cooking pasta, 2-3 min, adding 1/4 pasta water if necessary. Divide among 4 plates & garnish with fresh basil leaves & grated cheese.
