Ingredients
- 1 Tbs canola oil
- 1 cup chopped onion
- 1 cup chopped green bell pepper
- 1 medium zucchini, diced
- 2 cloves garlic, minced
- 3 cans diced tomatoes and green chiles
- 1 can pinto beans, drained and rinsed
- 1 can black beans, drained and rinsed
- 1 can navy beans, drained and rinsed
- 1 cup frozen corn
- 1 tsp. ground cumin
- 1/2 tsp. ground chili powder

Place all ingredients into crock pot; add low-sodium broth to desired consistency. Simmer for 3-5 hours – enjoy the aroma. Ladle into serving bowls. Top with dollop of sour cream and cilantro, or serve with crusty bread for dipping.
