Ingredients
- 1 cup butter, at room temperature
- ¾ cup sifted icing sugar
- 2 cups flour
- 1 cup finely chopped pistachios or pecans
- ½ cup raspberry or apricot jam, or lemon curd
Preparation
Step 1
Place butter in a bole and cream in the sugar. Gradually stir in flour, just until mixed.
Preheat the oven to 300 degrees. Place the nuts in a small bowl; pinch off 1 tbs. of dough and form into a ball. Lightly roll the dough in the nuts and place on a baking sheet. Make an indent in the centre of each cookie.
Bake the cookies in the centre of a preheated oven until the edges are golden, 15 – 18 minutes. Just before serving, fill each cookie with ½ tsp. jam or lemon curd.
