Ingredients
- cat fish fillets
- milk
- 1 to 1 1/2 cups cornmeal
- salt and pepper
- garlic powder & dried thyme
- OR
- Chef Paul's Magic
- OR
- Emeril's Essence
- melted butter
- lemon
Preparation
Step 1
Soak fillets in milk for about 1 hour.
Mix corn meal with salt & pepper and garlic powder and thyme, or your choice of seasonings... dill, oregano
OR mix corn meal with Chef Paul's Magic, or Emeril's Essence.
Spray pan with Pam, remove fillets from milk and dust with corn meal mixture. Melt butter and drizzle over fillets.
Cook about 7 minutes, then flip for another 5 minutes.
Squeeze some lemon over cooked fish.
Tends to be on the bland side, so that's why you're adding the seasonings to the corn meal.
