Almond Flour Muffins

Ingredients

  • 2 1/2 cups almond meal
  • 3 eggs
  • 1/4 cup raw honey or agave nectar
  • 1/2 tsp salt
  • 1 tsp baking powder
  • 1 tb vanilla extract
  • 1 cup berries of choice (blueberries, strawberries, etc)
  • 1/2 banana, mashed

Preparation

Step 1

1. Preheat oven to 300 degrees F

2. Mix all ingredients until smooth

3. Fold in berries gently

4. Bake for 30 to 35 minutes, until slightly golden. Serve with honey and coconut butter for a tasty morning treat.
