Sauerkraut and Pork (Szekelygulyas)

Ingredients
- 1 onion, minced
- 2 tablespoons lard
- 2 pounds pork, cubed
- 1 teaspoon paprika
- salt and pepper to taste
- 1 1/2 pounds sauerkraut, soaked in water and drained
- 1 pint sour cream

Preparation
Step 1
Sauté onion in lard. Add pork, paprika, salt and pepper. Add water to prevent burning. Cook over low heat until meat is done. Add sour cream and heat thoroughly.
Serve with mashed potatoes.
