Fudgey White Chocolate Cookies

Ingredients

  • 1 cup butter, softened
  • 2 cups sugar
  • 2 eggs, large
  • 1 teaspoon vanilla extract
  • 2 cups unbleached or all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 12 ounces white chocolate chips

Preparation

Step 1

Preheat oven to 360 degrees F. Note: I found that baking cookies at 360 degrees F and on the second from the top rack in the oven, works well for cookies.
In a mixing bowl combine the butter and sugar. Mix on low until combined and then mix at medium speed for about a minute.

Scrape the bowl and add the eggs and vanilla extract. Mix on low until combined and then about a minute each on medium and then high speed.

Add the first cup of flour, cocoa powder, salt, baking powder and soda. Mix on low until combined for about a minute.

Add the rest of the flour and mix on low until just until the flour disappears.
Add the white chocolate chips and mix on low until the white chocolate is evenly distributed.

Using a small cookie scooper (about 1 ounce) drop dough onto ungreased cookie sheets. Press the dough down to flatten slightly.
Place in a preheated 360 degrees F oven and bake for approximately 10-11 minutes, or until the tops just start to crackle. Cookies should be soft to the touch, do not over bake.
Cool for 10 minutes before transferring them to a cooling rack, or cool for 20 minutes on the baking sheets, before storing them in an airtight container.
These cookies freeze well, if there's any leftover!
