Meatloaf with mushroom gravy & grilled green beans (P2)

Ingredients

  • Meatloaf Ingredients:
  • 1 lb lean ground beef
  • 1/4 onion chopped
  • 1 clove garlic minced
  • 1 egg
  • 1 cup shredded cabbage
  • Sea Salt
  • Chili powder
  • ground pepper
  • oregano

Preparation

Step 1

Simmer onions and garlic in a little beef broth until onions are translucent. Add onions/garlic to the ground beef and seasonings. Mix thoroughly. Add egg and continue to mix. Add shredded cabbage. Press into loaf pan. Bake at 350 for 35-60 min.

To make the gravy ... use the same pan you grilled the onions in and heat with a little broth and soften the chopped mushrooms (you decide how many and how big you like them.) Add a little more beef broth than what you think you would need for gravy. Take 1 tsp of arrowroot flour and mix with a little water and add to the simmering beef broth to thicken into a gravy. Use to top the finished meatloaf.
