Beefy Nacho Casserole

Ingredients

  • 1 lb ground beef
  • 1 tbsp chili powder
  • 12 oz picante sauce
  • 1 can corn, drained
  • 1/2 cup sour cream
  • 10 tortillas (corn)
  • 2 cups shredded monterey jack cheese

Preparation

Step 1

1. Preheat oven to 350F. In a large skillet, brown ground beef with chili powder until no longer pink. Drain off excess fat. Stir in picante sauce, drained corn and sour cream.

2. Cut tortillas in quarters and soak in a small bowl of cool tap water for 1-2 mins.

3. Grease a 2qt casserole dish. Layer 1/3 of the tortilla quarters into the dish, then spoon in 1/3 of the meat mixture and 1/3 of the cheese. Repeat layers ending with cheese. Cover with foil and bake for 30 mins.
