Basic Green Chile Sauce

Ingredients

  • Optional ingredients to taste:
  • 2 pounds frozen Green Chiles
  • 3 cups water
  • 4 cloves garlic – roasted, peeled and finely chopped
  • 1/2 teaspoon Cumin or Turmeric and/or Garlic salt
  • Onion salt
  • Salt and Pepper to taste

Preparation

Step 1

1. Defrost 2 pounds of frozen Chile which when cleaned makes about 1 ½ pounds. Split up the roasted Chile.
2. Remove the peels without washing to preserve the flavor and oils of the roasting. Remove as many of the seeds as possible.
3. In a blender or food processor, add 3 cups water. Add the Chiles and chop, then blend at medium setting until sauce is to desired consistency. Depending on what you use this for, water may be added to thin the mixture or Chiles added to thicken.
