Almond Butter Cookies

Ingredients

  • 2 oz. almond paste
  • 1 cup icing sugar
  • 2 eggs
  • 1 cup butter
  • 1 tsp. vanilla
  • Salt
  • 2 ½ cups flour
  • 1 cup strawberry preserves
  • 4 oz. semi-sweet chocolate, melted
  • ½ cup chopped almonds, toasted

Preparation

Step 1

Preheat oven to 350 degrees. Cream the almond paste and sugar together. Add eggs one at a time, beat until smooth and light. Add butter, vanilla, salt and beat until smooth. Add all the flour at once and stir but don’t over mix.

Place the dough into a piping bag, pipe out the cookies onto baking sheets, bake for 10-15 minutes. Serve the cookies plain or sandwich together with preserves, dip partway in chocolate and coat with chopped nuts.
