Almond Biscotti

  • 2 1/2 cups sugar
  • 2 cups cake and pastry flour
  • 1 3/4 cups and 3 tbs. flour
  • 1/4 tsp. Baking soda
  • 1 lemon, grated
  • 1/8 tsp. salt
  • 5 eggs, lightly beat
  • 2 tsp. butter, at room temperature
  • 1 tsp. vanilla
  • 1/4 tsp. almond extract
  • 1 1/2 cups whole almonds, lightly toasted



Step 1

Preheat the oven to 300 degrees.

Combine the sugar, flours, baking soda, lemon and salt in a bowl.

In a separate bowl combine the eggs, butter, vanilla, and almond extract, beating until combined. Combine the eggs into the dry ingredients and add the almonds. The dough will be sticky so coat hands with flour and shape dough into logs (will make approximately 5 logs), place on baking sheet and bake approximately 50 minutes to 1 hour, or until golden.

Cool 10 minutes and then cut on a diagonal and place on a baking sheet cut side down. Bake another 10 minutes, until lightly golden.
