Ingredients

  • Beat together:
  • 1 3/4 cup sugar
  • 1 1/2 cups oil
  • 4 eggs
  • Stir in:
  • 2 cups flour
  • 2 t. baking powder
  • 2 t. baking soda
  • 2 t. cinnamon
  • 1 t. salt
  • 1 t. vanilla
  • Fold in:
  • 3 cups grated carrots
  • 1 cup ground pecans
  • Icing:
  • 1 pkg. cream cheese
  • 1- 1 lb. box powdered sugar
  • 1 stick margarine
  • 2 t. vanilla
  • 1 can crushed pineapple, drained

Preparation

Step 1

9 x 13 greased pan. Bake 40-45 minutes at 350 degrees.
