Ingredients

  • 1 1/2 LBS ROUND OR CHUCK STEAK
  • 2 TBS.FLOUR
  • % TSP. SALT
  • 'l2 TSP. GROUND PEPPER
  • 3 TBS. SHORTENING
  • 1 1/2 CUPS STEWED TOMATOES
  • 1 ONION, SLICED

Preparation

Step 1

Preheat oven to 325 F. Trim excess fat
from steak. Combine the
flour salt, and pepper. Sprinkel half the
flour mixture on one side
of the meat and pound in with a meat
tenderzing mallet or the rim
of a saucer. Turn the meat over and repeat
on this side. Melt shortening in a covered pan
or dutch oven. When it is hot, add the
meat and brown over medium heat until both sides
are well colored. Add the tomatoes
and onions, cover and place in the oven
for about 2 hrs or until tender.
