Creamy Cauliflower Soup

Ingredients

  • 1/4 cup onion
  • 4 tbsp. oleo or butter
  • 1/4 cup flour
  • 3 cups chicken broth
  • 2 cups milk
  • 1 tsp. Worcestershire sauce
  • cauliflower
  • 4 oz. sharp process american cheese (1 cup shredded)

Preparation

Step 1

Cook medium head cauliflower in small amount of boiling salted water for 10-15 minutes. Drain and break into small buds.
In large saucepan, cook 1/4 cup onion in 4 tbsp. oleo or butter until tender but not brown.
Blend in 1/4 cup flour; add 3 cups chicken broth and 2 cups milk. Add 1 tsp. Worcestershire sauce and stir; cook until mixture thickness slightly.
Add cauliflower buds and bring to a boil; stir in 4 oz. sharp process american cheese (1 cup shredded)
