My Turkey Meatloaf

This is how you rid your fridge of leftover veggies. Use any vegetables you have on hand, dice them up and make a delicious meatloaf with ground Turkey.

'My' could be anyone's recipe depending on the veggies used.

Ingredients

  • Vegetables, chopped into small pieces (I.e. Onion, Broccoli, Cauliflower, Carrot, Peppers, Mushrooms, Spinach, Zucchini, etc)
  • Ground Turkey
  • Grapeseed Oil
  • Eggs
  • Ketchup or Tomato Paste
  • Almond Flour
  • Spices (I.e. garlic, salt, pepper, parsley, thyme, etc)
  • Hot sauce (topper; optional)

Preparation

Step 1

Set oven to 350 degrees.

Line meatloaf tin with parchment paper if desired; easier to remove meatloaf and to clean sheet!

In a bowl, combine chopped vegetables + turkey + grapeseed oil + eggs + ketchup/tomato paste.

In another bowl, combine almond flour + spices.

Stir both mixtures together until well combined.

Put mixture evenly into meatloaf tin.

Bake for approximately 50 minutes or until edges are browned and it is cooked through.

Remove the loaf from oven and let cool for 5-10 minutes. Top with Hot Sauce if desired. Slice and serve.
