Tomato Mozzarella Salad ~ With a Twist!

Ingredients

  • 2 pints mixed tomatoes (cherry, grape, pear, garden)
  • 1 container fresh mozzarella, cherry size
  • 1 avocado, flesh diced
  • 3 T mixed fresh herbs
  • 1/4 C extra virgin olive oil
  • 1/4 C vinegar

Preparation

Step 1

Cut the tomatoes into bite sized pieces.

Place the tomatoes, mozzarella, and avocado in a bowl. Add the herbs, oil, and vinegar.

Season with salt and pepper if desired.

Mix gently and chill before serving.

Dressings for Tomato Mozzarella Salad:
I typically use a simple dressing of olive oil and vinegar for Tomato Mozzarella Salad. Many times I change up what vinegar I use to add a different flavor to the mix. Apple cider, white wine, and red wine vinegars are some of my favorites. I’ve even tried a raspberry wine vinegar which added great flavor along with a bit of sweetness.
