This is an incredibly easy, hands-off method of cooking beans. Usually you need to soak beans before cooking them, but with this method, you can skip that. This makes approximately 6 cups cooked beans, equivalent to 4 15-oz. cans.

  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 2 bay leaves
  • 1 tsp dried basil, oregano or thyme
  • 1 lb dried beans, rinsed and picked over

Step 1

STEP 1: Saute onion and garlic in olive oil until soft, about 5 min. Place in a slow cooker along with bay leaves and herbs. Add beans. Cover with hot water by 1 inch.

STEP 2: Cook on high for 6 hours. Chill beans, covered, in cooking liquid until ready to use.
