Ingredients

  • 1 Lb ground pork (you can substitute with ground chicken or beef)
  • 2 Tbls Oyster sauce
  • 1 Tbl cooking oil
  • 3 ozs Chinese Sausage (Lop Choeng), coarsely chopped
  • 1 Tsp Fresh Garlic, minced
  • 1 Tsp dried Red pepper flakes
  • 1/2 Cup water Chestnuts, coarsely chopped
  • 4 Green Onions, chopped, separating green part from the white
  • 1/2 Cup sliced Mushroom (optional)
  • 1/2 Cup Bean sprouts (optional)
  • 3 Tsp cornstarch dissolved in 5 Tsp of water
  • Lo Mein noodles cooked Al Dente
  • Sauce
  • 1 Cup of chicken stock
  • 2 Tbls Hoisin sauce
  • 1 Tbl Soy sauce
  • 1 Tbl Worcestershire sauce
  • 1 Tsp Sesame oil

Preparation

Step 1

Combine ground meat and oyster sauce in a bowl. Let it stand for 30 minutes. Combine sauce ingredients in a bowl.
Place a wok over high heat until smokey. Add the oil, swirling around to coat the sides. Add the ground meat and sauté on high heat until browned, set aside. Add the sausage with garlic, pepper flakes and white part of the green onion, stir fry for 1 or 2 minutes. Add the mushrooms, water chestnuts and bean sprouts. Stir fry for 1 or 2 minutes then add the ground meat and the sauce mixture and bring to a boil. Add the cornstarch mixture and cook, stirring until the sauce boils and thickens. Add the noodles and toss for few minutes then add the green part of the onions and turn off the heat.
