Pina Colada Pancakes

Ingredients

  • 2 cups all purp flour
  • 1/4 cup + 2 tbsp sugar
  • 1/2 tsp salt
  • 3 tsp baking powder
  • 1 cup coconut milk
  • 3 tbsp butter, melted & cooled slightly
  • 2 lg eggs
  • 3/4 cup fresh or canned pineapple chunks, thinly sliced
  • 1/2 cup shredded sweetened dried coconut

Preparation

Step 1

In lg bowl, whisk flour, sugar, salt & bak powder, combine milks, butter & eggs in another bowl. Add all wet to all dry, whisk until just mixed, make pancakes.

Syrup:
Mix in saucepan, leftover coconut milk, pineapple juice & 3-4 tbsp sugar, until warm.
