Shrimp Wonton soup

Ingredients

  • Soup:
  • 3/4 Lb Raw Shrimp, peeled de-veined and finely chopped
  • 2 Scallions, finely chopped
  • 1/2 “ Piece Fresh Ginger, peeled and grated
  • 1 Clove Fresh Garlic, grated
  • 1 Tsp Rice Vinegar
  • 1 Tsp Sesame oil
  • 1 Tsp Soy Sauce
  • 1/4 Tsp White Ground pepper
  • Salt to taste
  • 1 Oz Water chestnuts, finely minced
  • 1 Tsp Corn starch
  • 1 Egg, separated
  • 1 Package of thin Wonton skins
  • 4 Cups chicken Broth
  • 1/2 “ piece Fresh Ginger, finely chopped
  • 2 Tsps Sesame oil
  • 1 Tbl Soy sauce
  • 4 Scallions, cut into 1” pieces
  • Fresh Shitaake mushrooms sliced (optional)
  • Or 1 Package Enoki Mushrooms
  • 1 Cup small sized Bok choy
  • Salt to taste

Step 1

In a medium sized bowl, mix together the shrimp, the egg white, and the rest of the ingredients with the exception of the egg yolk. Add the cornstarch and stir to blend. The mixture should be stiff. Set aside to marinate for half hour.
Place a Wonton skin on a flat, dry work surface with a corner pointing toward you. Place 1 teaspoon of filling in the center of the wrapper. Lightly brush the two edges farthest from you with beaten egg yolk. Fold the Wonton in half, away from you, making a triangle. Press edges firmly to seal. Lightly brush the two corners nearest you with egg yolk, fold them over your finger, and press together to seal. Place the finished Wontons on a tray that has been lightly dusted with cornstarch.
Heat 3 quarts of water to boiling in a large pot. Add the Wontons and cover.
Once the water is boiling again, cook for about 4 minutes or until they rise to the surface.
Remove with a long-handled strainer and drain.

In a large pot, heat 1 tsp of oil drop in the ginger and mushroom stir fry on medium-high heat for a minute or two, then add the Stock and let it come to a boil. Add to the chicken stock the remaining ingredients with the exception of the cut scallions, and bring to a boil. Add as many of the pre-cooked Wontons as you want to serve. Sprinkle some of the chopped green onions in the serving bowl.
