Shrimp Scampi with Pasta

Ingredients

  • 2 tbsp. olive oil
  • 2 tbsp. butter
  • 4 cloves garlic, minced
  • 1/2-1 tsp. red pepper flakes
  • 1 lb. large shrimp, shelled and de-veined, with tails on
  • Salt to taste
  • 1/2 cup white wine
  • 2 tbsp. finely chopped parsley
  • Pepper to taste
  • 1 tbsp. lemon juice
  • Pasta, cooked according to pkg. directions

Preparation

Step 1

In a large skillet, add the oil and butter. Heat over medium-high heat and add the garlic and red pepper flakes. Saute for a minute or two or until the garlic becomes fragrant and starts to brown. Add the shrimp to the pan. Add salt to taste and the wine; stir to coat. Raise the temperature to high and allow to boil for 2-3 minutes. Stir the shrimp so most of the cooked sides are facing up. Allow to cook for an additional minute or two. Remove from the heat and add the parsley. Toss to combine. Add the pepper and lemon juice. Serve over pasta with remaining wine sauce in the pan.
