Ingredients
- 1 c oatmeal flour
- 1 c cornmeal
- 1 TB baking powder
- ½ tsp salt
- 3 egg whites
- 2 TB honey, organic if possible
- 3 TB canola oil
- 1 c skim milk
- ½ cup flaxseeds, ground
Preparation
Step 1
Mix dry ingredients (flour, cornmeal, baking powder, and salt) together. In a separate bowl blend the remaining ingredients and pour into the dry mixture. Blend thoroughly. Pour batter into muffin tins that have been sprayed with vegetable spray or into cupcake papers. Bake 400 for 20 – 25 minutes or until golden brown. Makes 1 dozen muffins.
