Chicken & Broccoli Stir Fry

Ingredients

  • 1 TB oil
  • 1 lb boneless skinless chicken breasts, cut into strips
  • 4 c vegetables (broccoli, red pepper strips, sliced water chestnuts)
  • 1 ½ c chicken broth
  • 2 TB soy sauce
  • 2 TB cornstarch
  • 1 tsp garlic powder
  • ¾ tsp ginger
  • 2 c Minute Original Rice, uncooked

Preparation

Step 1

Stir-fry chicken in hot oil in large skillet until browned. Add vegetables; cook and stir until tender-crisp.

Mix broth, soy sauce, cornstarch, and spices; stir into skillet. Bring to boil; boil 1 minute.

Prepare rice as directed on package. Serve chicken and vegetables over rice.
