Shoofly Pie

Shoofly Pie is an old Pennsylvania Dutch recipe. It has two parts that go into a baked pie shell.

Ingredients

  • Bottom part
  • 3/4 cup dark corn syrup
  • ¾ cup molasses
  • 1 cup boiling water
  • 1 teaspoon baking soda 1 egg, lightly beaten
  • Top Part
  • 1 cup sifted all purpose flour
  • 2 tablespoons shortening or lard
  • 2/3 cup firmly packed dark brown sugar
  • 1 unbaked 9 inch pie shell

Preparation

Step 1

Prepare bottom part. In a medium size mixing bowl, combine corn syrup, molasses and water; stir in soda. Beat a little molasses into egg, then stir back into mixing bowl.

Prepare top part with a pastry blender, mix together flour, shortening or lard and sugar until the texture of coarse crumbs. Mix 1 cup of the crumbs into the molasses mixture and pour into unbaked pie shell. Scatter remaining "crumbs" on top.

Bake in a hot oven (400 degrees) for 25 minutes, or until crust is lightly browned and filling is puffy. Remove from oven and let cool to room temperature before cutting.

Bake at 400 Degrees for 25 minutes. Makes 1-9" pie
