Ingredients

  • 2-4 Cups cooked Shredded chicken
  • 2 cups Chicken Stock
  • 1 can garbanzo
  • 1 can kidney
  • 1 can Rotel tomato/green chiles **
  • 1 large onion
  • 1 clove smashed garlic
  • 1 1/2 tsp cumin
  • 1 Tbs butter

Preparation

Step 1

sauté onion and cumin in pot with a Tbs butter.
add all other ingredients bring to a high simmer then lower to low
and simmer at least an hour.

**if you want a milder taste use a can of fire roasted tomatoes instead of Rotel. If you want it HOT - add the HOT Rotel.

serve in bowl with tortilla chips or strain some liquid out and wrap in tortilla - serve with warmed green chile sauce & some liquid from pot over top w/shredded cheese.

can serve with spanish rice too.
