yum like a taco

Ingredients
- 1 good size lengua
- dried cilantro
- 6 to 7 bay leaves
- Oregano
- 1 jalapeno pepper
- 1 onion
- cloves off 1 whole head of garlic
- oil,and corn tortillas. toppings cilantro,onion,cabbage,lime,and jalapenos.

Preparation
Step 1
-take lengua out of package and rinse. place in crockpot.
-add in some dried cilantro-
-some oregano,-6/7 bay leaves,-garlic cloves
-sliced onion and the jalapeno(can add more if you want)
water to cover the top.
-cook on low in the crockpot over night
-remove from crockpot,drain water but keep some of the garlic cloves and onion.
- take a fork and pull off the outer layer(it is rough) of skin off the tongue. Make sure you get it all because it is not a great thing to get a piece of when u bite down.
-put back in crock pot with onion and garlic and shred with 2 forks(some cube it but we prefer shredded)
-Heat some oil in a big frying pan on the stove
-cook until brown
-remove from heat.
-Heat up your comal to cook the tortillas.
-double up the tortillas (because the juices cause the tortilla to get soggy).
-add diced onion and cilantro
-add meat on top of the onion and cilantro
-add cabbage on top,roast some jalapenos, and add some limes on the side and it is all ready to go. (add onion,salsa,hot sauce,whatever u want). I just send them to work like that with hubby and they put what they want on it.
