SHRIMP TACOS WITH AVOCADO CILANTRO CREAM

Ingredients

  • Tacos:
  • 3/4 pound large cooked shrimp (about 24 shrimp)
  • 1/2 cup diced tomato
  • 2 tablespoons chopped fresh cilantro
  • 1 tablespoon unsalted butter
  • 2 tablespoons fresh lime juice
  • Salt and pepper
  • 1/4 teaspoon chili powder
  • 1/2 teaspoon Tabasco
  • 3/4 teaspoon cumin
  • 1/4 teaspoon garlic salt
  • 2 cups thin sliced romaine lettuce
  • 1/4 cup thin sliced red onion
  • 1 cup shredded Monterrey Jack cheese
  • Flour tortillas
  • Avocado Cilantro Cream:
  • 1/2 cup sour cream
  • 1 ripe avocado
  • 1/2 cup chopped cilantro
  • 2 limes, juiced
  • 1/2 teaspoon lime zest
  • Salt and pepper

Preparation

Step 1

Combine all but last 3 taco ingredients.

For cilantro cream, mash the avocado, then add the remaining cilantro cream ingredients.

To make tacos, put shrimp mixture on taco shells. Top with cheese cilantro cream. Roll up and serve.
