Ingredients

  • 3 cups small fingerling potatoes
  • 1 T water
  • 1/3 cup minced red onion
  • 1/4 cup bacon mayonnaise - mayo with bacon bits and bacon grease added
  • 1.5 T Dijon mustard
  • salt to taste
  • bacon bits to garnish

Preparation

Step 1

Place potatoes and water in quart zip bag. Without sealing bag submerge it in a bowl of water almost to opening. Seal the bag. Microwave on high until tender - about 4 minutes. Remove potatoes and set aside to cool.
Stir together onion, bacon mayo and mustard. slice potatoes into 1/2 coins and gently stir in mayo mixture. garnish with bacon bits.
