Avocado and Bacon Green Salad

Ingredients

  • 2 Slices bacon, halved
  • 3 cups red-leaf lettuce, tom into bite size pieces
  • 1 small avocado
  • ROQUEFORT VINAIGRETTE
  • 1 Tbsp. Red wine vinegar
  • 1/8 tsp. Salt
  • 1/8 tsp. Ground black pepper
  • 2 Tbsp. Whipping cream
  • 3 Tbsp. Olive oil
  • 2 Tbsp. Crumbled Roquefort Cheese

Preparation

Step 1

Cook bacon until crisp. Crumble and set aside.
Place lettuce in individual salad bowl, cover and refrigerate.
Combine all ingredients for vinaigrette in V2 pint jar cover and shake well.
At serving time peel avocado and coarsely chop and add to salad. Pour dressing over top and top with bacon.
