CHICKEN GREEK

Ingredients

  • 2 whole chickens
  • Melted butter
  • 2 lemons
  • 3/4 cup dry white wine
  • 1/4 teaspoon salt
  • dash of pepper
  • 1 teaspoon oregano
  • 1 clove garlic minced
  • 1/2 cup boiling water

Preparation

Step 1

Wash chickens inside and out. In a small pan, combine melted butter, lemon juice, 2 tablespoons of the wine, salt, pepper and oregano. Brush inside and outside chicken. Add garlic to chicken and place on a roasting pan. Pour the balance of the basting sauce, wine and water in pan. Cover chicken with foil and bake at 325 degrees. After 45 minutes lift foil, and baste chicken. After another 30 minutes remove foil, baste again, and continue baking basting frequently. Skin fat from the drippings and pour any remaining sauce over chicken before serving.
