Peter Luger-Style Steak Sauce

We love this cross between steak and cocktail sauce so much, we had to create our own version. The ketchup base has a well-balanced combination of molasses, Worcestershire, vinegar, and horseradish that makes it perfect for surf or turf!

Ingredients
- 1 1 1 cup ketchup
- 2 2 1 tablespoons plus 1 teaspoon Worcestershire sauce
- 2 2 2 tablespoons distilled white vinegar
- 2 2 2 tablespoons mild-flavored molasses
- 2 2 2 tablespoons prepared horseradish
- 1 1 1 tablespoon plus 1 teaspoon sugar
- 1/2 1/2 1/2 teaspoon garlic powder
- 1/4 1/4 1/4 teaspoon kosher salt
- 1/4 1/4 1/4 teaspoon freshly ground black pepper
- 1/4 1/4 1/4 teaspoon Louisiana-style hot sauce, such as Tabasco

- 1 1 1 Tbsp. olive oil
- 1/4 1/4 1/4 cup onion, minced
- 2 2 2 cloves garlic
- 1/4 1/4 1/4 cup dark brown sugar, packed
- 1/4 1/4 1/4 cup red wine vinegar
- 2 2 2 Tbsp. Worcestershire sauce
- 1 1 1 tsp. salt
- 1 1 1 tsp. pepper
- 1 1 1 cup tomato sauce
- 2 2 2 Tbsp. horseradish
- 1/2 1/2 1/2 chipotle pepper (optional)
- Instructions
- 15 to olive oil in a small saucepan or sauté pan over medium-low heat. Add the onion and garlic and cook, stirring occasionally until the onion is soft and translucent – about 15 minutes. Be careful not to brown the onion.
Preparation
Step 1
Whisk ketchup, Worcestershire, vinegar, molasses, horseradish, sugar, garlic powder, salt, pepper, and hot sauce in a medium bowl.
Sauce can be made 5 days ahead. Store in an airtight container and chill.
