CHICKEN BAKED WITH LEMON & TARRAGON

Ingredients

  • 1/4 cup (1/2 stick) unsalted butter
  • 1 large garlic clove, minced
  • 1 tbsp Dijon mustard
  • 1/2 cup dry breadcrumbs
  • 1 1/2 tsp grated lemon peel
  • 1/2 tsp dried tarragon, crumbled
  • 3 large chicken breast halves
  • Salt and freshly ground pepper

Preparation

Step 1

1. Preheat oven to 375 °F, line baking pan with foil.

2. Melt butter in heavy medium skillet over low heat.

3. Add garlic and sauté 1 minute.

4. Remove from heat and stir in mustard.

5. Mix breadcrumbs, lemon peel and tarragon on plate.

6. Turn chicken in butter mixture to coat, then turn in crumbs, coating completely.

7. Arrange skin side up in prepared pan.

8. Sprinkle with salt and pepper.

9.Bake until chicken is cooked through, basting occasionally with pan drippings, about 1 hour.
