Ingredients

  • Guacamole:
  • 4 Boneless chicken breasts, sliced in thin strips
  • 1 tbsp Olive oil
  • 2 cup Sour cream
  • 4 oz can chopped green chilies
  • 1 cup grated Monterey jack cheese
  • 8 medium Flour tortillas
  • 1 cup grated Sharp cheddar cheese
  • 1/2 head Lettuce, shredded
  • 2 Tomatoes, diced
  • 4 Green onions, chopped
  • Ripe olives, sliced
  • 2 Avocados, peeled and mashed
  • juice of 1/2 lemon
  • 1 tbsp chili powder
  • 1/4 tsp cayenne pepper
  • 1 tbsp Worcestershire sauce
  • 1 Garlic clove, minced
  • 2 drops Tabasco sauce

Preparation

Step 1

Saute chicken in oil until just done. Remove from heat. Stir in 1 cup sour cream, chilies and jack cheese. Fill tortillas and fold over burrito-style. Place side by side in lightly greased casserole. Sprinkle with cheddar. Bake at 350F for 20 minutes, or until cheese melts. Remove from oven; top with guacamole, remaining sour cream, lettuce, tomatoes, onions and olives.
To make guacamole: combine all ingredients.
