Mashed Potatoe Casserole

This is not a low fat recipe but it can be made a couple days in advance.

Ingredients

  • 12 large red potatoes, peeled and boiled until tender. Add a couple of garlic cloves to the water
  • 6 ounce cream cheese- do not use low fat
  • 8 ounce sour cream-do not use low fat
  • 1/2 cup half and half
  • s & p

Preparation

Step 1

Cook and drain potatoes.
In your big mixer(kitchen aid) combine all ingredients until smooth.
Put mixture into a buttered a 9x13 glass pan.
Cover and refrigerate for up to 3 days or bake immediately.
Cover with foil and bake at 350 for 35-45 min, remove foil and bake an additional 15 min.
