Beef Jerky

Ingredients
- lean beef, (such as rump, top round or sirloin),1 inch thick, completely trimmed of fat
- 1/3 cup soy sauce
- 2 tbsp Worcestershire sauce
- 1/2 tsp onion pwd
- 1/2 tsp garlic pwd
- 1/2 tsp ground ginger
- 1 tsp salt
- 1/4 tsp pepper
- 1 tbsp sugar
- 1/2 tsp liquid smoke

Step 1
Cut beef into 1/8 inch slices. Cut slices as long as possible. cutting with the grain results in chewy jerky. Cutting across the grain results in tender, crunchy jerky.
Combine remaining 9 ingredients in medium bowl. Stir until sugar dissolves. Add beef, stir to coat well.
Cover. Chill overnight. Set wire racks in foil-lined baking pans with sides. Draw beef strips across edge of bowl to remove excess marinade. Arrange in single layer close together on racks.
Bake in 170*F oven for 6 to 7 hrs, turning over strips at half time and rearranging pans , until beef strips are browned, hard and dried. Store in air-tight container. If moisture forms inside storage container, bake once more for a short time.
