Ingredients
- 8 oz. lasagna noodles
- 1 lb. turkey sausage
- 4 c. sliced mushrooms
- 1/4 c. water
- 1 lb. spinach thawed
- 28 oz. canned chunky crushed tomatoes
- 1/4 c. chopped basil
- Salt & pepper
- 1 lb. part skim milk ricotta
- 8 oz. shredded mozzarella
Preparation
Step 1
Preheat oven to 350 degrees. Grease baking dish.
Boil and salt water.
Cook noodles until they are a little less than al dente.
Heat skillet over med. high heat. Add sausage, mushrooms and water. Cook until water is evaporated. Squeeze spinach and add to pan. Stir thoroughly and remove from heat.
Mix tomatoes with basil, salt and pepper.
Spread 1/2 c. tomatoes in dish. Layer noodles, ricotta, 1/2 c. sausage mix, 1/3 c. tomato mix and 1/3 c. mozzarella cheese.
Continue to layer until all ingredients are used.
Cover with foil and bake 1 hour- 1 hour 10 minutes. Remove foil and sprinkle mozzarella cheese on top and bake 8-10 more minutes.
Serve with salad.
