Braised Beef Short Ribs

Ingredients

  • 1/4 cup flour
  • 8 beef short ribs
  • 1 tsp salt
  • 1/2 tsp pepper
  • 2 tbsp EVOO
  • 3/4 cup onion, diced
  • 1/3 cup carrots, diced
  • 1/4 cup leeks, chopped
  • 1 clove garlic, minced
  • 20 black peppercorns
  • 10 raspberries
  • 3 sprigs thyme
  • 2 bay leaves
  • 1 package beef bullion
  • 1/2 cup dry red wine

Preparation

Step 1

Preheat oven to 350 degrees. Prepare a large Dutch oven with cooking spray.

Sprinkle ribs with salt and pepper. Dredge in flour. Heat a large pan over medium-high heat. Add EVOO to the pan and heat. Add ribs and brown on all sides, but do not cook them. Remove the ribs from the pan.

Add the onion, carrot and leek to the pan and sauté for 5 minutes. Add garlic and cook 1 minute longer.

Place peppercorns, berries, thyme and bay leaves in cheesecloth and roll to secure it closed. Put the ribs in the prepared dish. Add the prepared bullion and wine to the ribs. Place the cheesecloth bundle on top of the ribs. Cover and cook for 2 1/2 hours. Serve the ribs topped with cooking liquid.
