Giant Ginger Cookies

Ingredients

  • 2 1/2 cups flour
  • 2 1/4 tsp baking soda
  • 1/2 tsp salt
  • 1 tbsp ground allspice
  • 1/2 tsp ground ginger
  • 1/2 tsp ground pepper
  • 3/4 cup + 1 1/2 sticks butter
  • 1 cup packed brown sugar
  • 6 tbsp molasses
  • 1 large egg
  • some white sugar for coating

Preparation

Step 1

Preheat oven to 350.

Racks in upper and lower thirds.

Line 2 pans with parchment.

In medium bowl, whisk flour, soda, salt, giner, allspice and pepper.

In a separate bowl, cream butter and sugar until light and fluffy.

Beat in molasses and egg.

With mixer on low, gradually beat in flour mixture until just combined.

Flatten dough into a disk and wrap in plastic.

Freeze for 20 minutes.

Divide dough into 12 1" balls.

Roll balls in the white sugar and place 3" apart on baking sheets. Flatten each ball before putting in the oven.

Bake until brown, about 12 minutes, rotating sheets halfway through.

Cool on wire rack.
