  • 1 boneless chicken breast, with skin
  • 2 small thyme sprigs
  • 1 large garlic clove, thinly sliced
  • 2 tbs. olive oil
  • Salt, pepper, and paprika
  • 1/3 cup chicken broth
  • 1 tbs. chopped parsley

Preparation

Step 1

Preheat the oven to 350 degrees. Loosen skin of the breast and slip an herb spring under the breast along with some garlic. Brush chicken with oil and sprinkle with spices.

Place chicken in a baking dish and add broth, bake, basting occasionally until golden and cooked through, about 40 minutes. Sprinkle with parsley-just before servine.
